Ingredients: 115 g(4oz) cod fillet, skin and bones removed
1 egg, beaten
4 tbsp dried breadcrumbs
1 tbsp olive oil
Cut the cod fillet into four pieces. Place the beaten egg in a bowl, scatter the breadcrumbs on a flat plate and gradually heat the oil in a frying pan. Dip each piece of fish in the egg and roll them in the breadcrumbs until coated.
Fry the four fish pieces for 4- 5 min each until the fish is cooked right through and the bread crumbs are golden brown; turn them over in the pan once.
Serve your home-made fish fingers to your toddlers with mashed potato and home-made tomato sauce.
