Oatmeal Cookies

Serving: Makes 35 cookies  

Ingredients: 1¼ cup - Oil, vegetable

                     1 cup, packed - Sugar, brown

                     1 large Egg

                     1 teaspoon - Baking soda

                     1 teaspoon - Salt, table

                     1 teaspoon - Cinnamon


                     1 teaspoon, ground - Nutmeg

                     3 cups - Oats, uncooked

                     1½ cup - Flour, white, all-purpose

                     1/2 cup- chocolate chips or halved                                     pecans 


Preheat the oven to 375 degrees F. 

Beat the oil, sugar and egg until light and fluffy. Add the flour, baking soda, salt, spices and mix well. Stir in oats and chocolate chips or halved pecans and drop by rounded tablespoons on the greased pan. 

Bake 8-9 minutes for chewy cookies and 10-11 minutes for crisp cookies. 

Cool the cookies for about  2 minutes, then remove to wire cooling track.
