Chocolate Birthday Cake


Preparation: 20 min

Serving: 12-14

Ingredients: 2 1/4 cups all purpose flour 

                      1 1/4 cups sugar

                      3/4 cup canola oil 

                      1 1/2 cups water 

                      2 1/4 tsp baking powder

                      1 tsp salt 

                      1 tsp vanilla 

                      2 large eggs 

                     1/4 cup cacao powder

                     3 cups semi-sweet chocolate chip         


Preheat oven to 350º F. Prepare one 9-inch cake pan by spraying with baking spray or buttering and lightly flouring.

Add flour, sugar, cocoa, baking powder, and salt to a large bowl or the bowl of a stand mixer. Whisk through to combine all dry ingredients using your paddle attachment. 

Add water, canola oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined.

Pour the cake batter onto to the prepared cake pan. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center of the chocolate cake comes out clean.

Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.

Decorate the cake with some of your favorite healthy ingredients. I used sliced fresh strawberries on top and kellogg's cracklin' oat bran cereal around the cake.

Oatmeal Cookies


Preparation: 10 min

Cook Time: 10 min 

Serving: Makes 35 cookies  

Ingredients: 1¼ cup - Oil, vegetable

                     1 cup, packed - Sugar, brown

                     1 large Egg

                     1 teaspoon - Baking soda

                     1 teaspoon - Salt, table

                     1 teaspoon - Cinnamon


                     1 teaspoon, ground - Nutmeg

                     3 cups - Oats, uncooked

                     1½ cup - Flour, white, all-purpose

                     1/2 cup- chocolate chips or halved                                     pecans 


Preheat the oven to 375 degrees F. 

Beat the oil, sugar and egg until light and fluffy. Add the flour, baking soda, salt, spices and mix well. Stir in oats and chocolate chips or halved pecans and drop by rounded tablespoons on the greased pan. 

Bake 8-9 minutes for chewy cookies and 10-11 minutes for crisp cookies. 

Cool the cookies for about  2 minutes, then remove to wire cooling track.

BananaRa Muffins


Preparation: 15 min

Cook Time: 30 min 

Serving: Makes 12 muffins 

Ingredients:  2 1/2 cups flour 

                      1 1/4 cup brown sugar

                      1/2 cup oil

                      1/2 cup water

                      1 1/2 tsp baking soda

                      1 tsp salt

                      3/4 tsp baking powder

                      2 large eggs

                     1/2 tsp ground cinnamon

                     1/8 tsp ground nutmeg

                     3 medium bananas (ripe)

                     12 tbsp Granola (any kinds)

                     3/4 cup of raspberries                   


Preheat the oven to 350 degrees F. Butter the muffin pan. 

In a food processor, beat the flour, baking powder, salt, baking soda, cinnamon, nutmeg and sugar to combine. In a separate bowl mash the 3 medium bananas, and add oil, water and eggs beat with a whisker to combine. Add banana mix to the dry ingredient and beat all ingredients together for a minute. 


Place in muffin pan to make 12 equal sized muffins. Add fresh raspberries and 1 tbsp of granola on batter for each muffin. 

Bake for 30 mins. 

Enjoy an afternoon snack with your children, serve them a cup of milk and pour yourself a hot cup of coffee!

Chocolate Scones

Preparation: 10 min

Cook Time: 15 min 

Serving: Makes 12 scones  

Ingredients:  2 cups flour 

                      4 tsp baking powder 

                      1/2 tsp salt

                      1/4 cup sugar

                      80 g unsalted butter room Temperature

                      2/3 cup chocolate milk 

                      1 large egg  

                      1/4 cup semi-sweet chocolate chips 


Preheat the oven to 220 degrees C. 

In a food processor, beat the flour, baking powder, salt, and sugar to combine. Add the butter and pulse few times until the butter is completely distributed. Transfer to a large mixing bowl.

In a small bowl, whisk to combine the milk and egg. Save 2 tbsp of the mixture, and pour the rest into the mixing bowl. Stir to combine with a spatula, until a rough dough forms. Transfer to a lightly floured countertop and knead about 10 times until the dough comes together into a smooth ball. Roll the dough about 2 cm thick and use a 6cm diameter cutter to cut about 8 circles. Re-roll the scraps and cut out another 4. Place the scones onto a parchment or silicone mat lined baking sheet and brush the tops with the reserved egg wash mixture. Bake the scones for 13-15 minutes, until about tripled in height, and golden brown on the tops and bottoms.


Serve at Tea time with a cup of Hot milk for your younger kids or Tea for yourselves and your older ones!
